A little of History and Legends
As it is known that Brillat-Savarin was born in Bugey, to Belley, on April
1st, 1755. He is the ancestor and the model of all the gastronomic critics,
the author of the famous treaty on the Physiology of the Taste and the
creator of the word conviviality. In here is some quotations : " the one
who receives his friends and looks no personal care in the meal which
is prepared for them, does not deserve friends' credit note " " put a
man tired in front of a substantial meal, he is going to eat with effort
and will feel maybe better.
The cutting of the vineyard was "invented" according to the legend in
Bugey during the passage of St Vincent, boss of the winegrowers. We were
in May, whereas Saint Vincent blessed indefatigably Bugistes, his ass
went away to promenade under stocks. Finding in his taste the soft shoots,
grazing here, grazing farther, he made his meal.
Bewilderment and sadness when we noticed the matter. There was only a
quarter maybe promising clusters. But what clusters when in September
had come! Big, juicy, sweet as one pleases. We had just discovered that
the vineyard deserved to be cut ! We meant as soon as every year on January
22nd, the Saint would just be honored when begins the cutting. So that
today, no winegrower who respects himself will not allow to pass this
date without having cut at least a stock !
