Our ancestors already cultivated the vineyard to 16 ème century
in the Castle of Faix. The family tradition vine grower continues with
Daniel Etienne DEFAIX in Chablis today " world capital of the dry
white wine of guard ".
Here, in the center of a heritage cultural, historic, architectural exceptional
we implemented everything to welcome you with our hotel, restaurant, wine
bar, and his shop of the gastronomic specialities, visits it cellars millenniums

Cellars and family house are situated in the top of the village of Chassagne-Montrachet.
Leaned in Closed St Jean and built on the rock limestone, the house restored
date of 1820. Under the house and under the wine storehouses, are five
very beautiful vaults in cut stones. The most ancient of these cellars
date of the 16th century and welcome around its central pillar, the amateurs
of wine and beautiful stones.

The old Castle is the oldest domain (8 century) vineyards Daniel-Etienne
Defaix. In the purest tradition we produce here Two vintages Chablis Vieilles
et Très Vieilles Vignes. Tree Chablis Premier Cru : Les Lys, Vaillon
et Côte de Léchet. Deux Chablis Grand Cru : Blanchot et Grenouilles.
